Managing the ageing conditions according to temperatures.
Wine connoisseurs will take advantage of the distribution of the temperature zones within a wine cellar to manage the ageing process depending on the expected serving date. A zone with a temperature from 10°C to 14°C corresponds to the constant temperature range of the best underground cellars. The maturation process accelerates when a bottle is placed in warmer areas (temperatures above 12°C) and slows down in cooler areas (temperatures below 12°C).
